We have compiled for you a list of foods and drinks to prepare apart from rice, especially since the Eid ul-Kabeer is upon us. And the streets would be up and about beautiful people in their finest, colorful attire to celebrate the last day in the Muslims calendar, with their family and friends.

Eid means “festive” in Arabic. There are two parts of Eid:

  • Eid ul Fitr: This marks the end of the holy month of Ramadan, our fasting month. We also call it “Small Sallah”
  • Eid ul Kabeer: This marks the historical event of the sacrifice of our Prophet Ibrahim (A.S) and the sacrificial lamb. We call it “Big Sallah” and that’s why the meat is in abundance too.

It’s that blessed festival we Muslims all around the world come to celebrate by bringing friends and together in joy, happiness, harmony, and festivity.

You might find our previous story on How Eid Al Fitr Was Celebrated In Northern Nigeria helpful to gain more insight into these special festivities.

Food is necessary and the most important part of this festival. In Nigeria, most households consume rice during this festive period, and in this article which I hope comes in handy, I’ll be sharing with you recipes you can make at home apart from rice that will be delicious. You should spice things up in your household this Eid, let’s get spicy!

This is Mom’s favorite and is prepared when she wants to ditch the same old same old rice, when she’s in the mood to spice things up for Eid, this is her go-to always. I mean, why not? Pounded yam is filling, satisfying and when dipped in egusi makes the celebration just right and delicious.

We like to pound our yam using the mortar and pestle but with advancement now, there are blenders for pounding yam and also processed yam flour (poundo yam) but mortar and pestle remain in my household.

Ingredients For The Pounded Yam

  • Yam
  • Water

Ingredients For The Egusi Soup

  • Grounded melon (egusi) seeds
  • Palm oil
  • Crayfish
  • Spinach/Ugu leaves
  • Pepper
  • Onions
  • Seasoning cubes
  • Beef/Meat
  • Salt

Procedures For Preparing Pounded Yam

  • Peel the skin off the yam and cut it into small segments.
  • Wash properly till clean and water runs clear.
  • In a pot over medium heat, add in water and yam to cook.
  • Allow cooking for 30 minutes till it becomes fork tender (that is, a fork can go through it)
  • Now, prepare your mortar and pestle by washing with water to remove dirt and dust.
  • Using a fork, pick the yam into the mortar and pound.
  • Pound yam till dough forms.
  • Add in hot water and pound again lightly till the dough becomes smooth and stretchy.
  • Use a spoon to pack this into a plate or wrap it in nylon.

Procedures For Preparing Egusi Soup

You can blend the egusi at home using the blender. Blend together with crayfish. You could also buy the grounded melon seeds from the store/market.

There are two ways to make egusi soup and I’ll be sharing with you both methods. There is the;

Pounded yam can also be eaten with ewedu, ogbono, or vegetable soup. I’ll be showing you how to make ewedu soup in the next recipe.

How to Prepare Amala And Ewedu Soup

This is basically a Yoruba delicacy that is eaten with stew. This ewedu is mixed with stew to enrich it and make it edible too. This is my very own favorite. I like to eat my amala with ewedu soup but you can eat it with egusi, vegetables or efo riro.

Ingredients For Amala

  • Amala (Yam flour)
  • Water

Ingredients For Preparing Ewedu

  • Jute (ewedu) leaves
  • Crayfish
  • Locust beans
  • Seasoning
  • Salt

Procedures For Preparing Amala

  • In a pot over medium heat, add in water and leave to boil.
  • Sieve your yam flour before it boils to avoid lumps in this amala. Your amala should be smooth, light, and fluffy.
  • When it starts to boil, add in yam flour.
  • Stir continuously using the wooden turning stick/paddling stick.
  • Give this a good stir.
  • Add in flour if it’s too watery and add in water if too strong.
  • Turn this mixture till flour is well incorporated into the water completely.
  • Using a spoon, clear the edges of the pot. You’ll begin to see the amala molding itself around the edges. Clear and scrape them into the pot.
  • Add in little hot water and cover. Leave to cook for 10 minutes.
  • Bring down from the heat.
  • Finally, stir again until you start hearing the ta-ta-ta-ta sound. That’s when you know it is light, fluffy, and smooth.
  • Use a spoon to wrap this in nylon. Your amala is ready.

Procedures For Preparing Ewedu Soup

  • Get your jute and pluck the leaves out.

The leaves are fortified with calcium and vitamin C. Jute is not just consumed for its food only but did you know? The fibers from the tree can be woven into ropes, hessian clothes, carpets, curtains, and yarn balls. Now let’s jute now!

  • Wash the leaves till water runs out clear.
  • Cut the leaves slightly so it will be easier to crush the leaves when beating with the broom. Don’t get confused, I’ll explain.

The broom is our normal broom but smaller, we call this Ijabe in Yoruba. It is used in beating/hitting the jute leaves till they get into smaller pieces. There are modernized brooms now we use for this sole purpose. Now, we are on the same page, yeah? Let’s continue.

  • Grate pepper, locust beans, and crayfish together.
  • In a pot over medium heat, pour in water and let it get hot.
  • Now, add in the leaves and leave to cook for 10-15 minutes.
  • When it starts to boil excessively, get your broom and begin beating/hitting.
  • Beat till leaves are crushed completely and till small.
  • Add in blended pepper, locust beans, and crayfish.
  • Add in seasoning and salt and give this a stir.
  • Allow to cook for 2-3 minutes until smooth and then turn off the heat.

Voila! Your ewedu is ready to be served. Add in your stew and enjoy this with amala or any preferred swallow of your choice.
