Also if you are the type that enjoys something different once in a while, then Egusi soup is the one for you. Egusi soup is one of the most popular soups in Nigerian Cuisine, and a major hit across many African restaurants in the diaspora. It is eaten with solid foods like fufu, semo, pounded yam, tuwo, amala, eba, etc., or as some would simply prefer to enjoy it with plain rice.

We have prepared this post to easily guide you on how to cook Egusi soup at home. Follow the procedure correctly and you would have Egusi soup to enjoy in about one and half hours.

Ingredients Needed For Cooking Egusi Soup

  • Grounded melon (egusi) seeds
  • Palm oil
  • Crayfish
  • Spinach/Ugu leaves
  • Pepper
  • Onions
  • Seasoning cubes
  • Beef/Meat
  • Salt

How To Cook Egusi Soup

You can blend the egusi at home using the blender. Blend together with crayfish. You could also buy the grounded melon seeds from the store/market.

There are two ways to make egusi soup and I’ll be sharing with you both methods. There is the;

  1. Frying method and;
  2. Mixing method

Procedure For Cooking Egusi Soup Using The Frying Method

  • Wash and cut meat into desired sizes.
  • In a pot over medium heat, add meat and water to boil.
  • Add seasoning, salt, and grated onions to the pot.
  • Allow cooking for 30 minutes till meat becomes soft and tender.
  • In a bowl, take out the meat and transfer it to this bowl.
  • Set the meat stock aside.
  • The next step is, in a pot over medium heat, pour in the oil, and leave to fry for 3-5 minutes. Do not overheat oil as this leads to bleaching of the oil and it ruins the egusi soup.
  • Add in sliced onions and sauté. Wait for that sizzle.
  • Add the grounded/blended egusi into the pot and let it cook for 7 minutes.
  • Stir this to avoid burning and shrinking.
  • Add in blended crayfish.
  • Now, pour in the meat and the meat stock from earlier on into the pot.
  • Add seasoning to adjust taste if need be.
  • Now, wash and cut the ugu/spinach leaves (you may use both) into stripes.
  • Add this into the pot and leave to simmer for 5 minutes.
  • Give this a stir. Turn off heat.

Ta-da! You’re done! Or you could try the mixture recipe for cooking Egusi soup:

Procedure For Cooking Egusi Soup Using The Mixing Method

  • Blend pepper, onions, and crayfish and set aside.
  • Wash the meat and cut it into desired sizes.
  • In a pot over medium heat, add meat and water to boil.
  • Add seasoning, salt, and grated onions to the pot.
  • Allow cooking for 30 minutes till meat becomes soft and tender.
  • Now, add in pepper and leave to cook.
  • In a medium bowl, pour in the egusi.
  • Add palm oil into this bowl and give this a mix till egusi is incorporated into the palm oil.
  • Add the egusi into the pot of meat by using a spoon. 
  • Now simply add in the egusi, stir, and cover the pot. Leave for 10 minutes for the egusi to curdle and form balls.
  • Gently stir and add water if too thick.
  • Taste to adjust taste if need be.
  • Now, wash and cut the ugu/spinach leaves (you may use both) into stripes.
  • Add this into the pot and leave to simmer for 5 minutes.
  • Give this a stir. Turn off the heat.

And finally, your Egusi soup is ready to be served and enjoyed with any of the earlier suggested foods.
